SUMMARY
The bacteria and enzymes in raw butter are amazing for your gut and help the body digest the butter fully, unlike pasteurized butter, which lacks the most important enzyme for digesting lactose (the milk sugars) called lactase. In many cases, the body cannot produce enough lactase on its own to digest pasteurized dairy products efficiently. This is why problems like lactose intolerance occur. However, in raw dairy products, there is the perfect number of bacteria to create natural lactase for proper digestion. The beneficial bacteria in raw dairy products help facilitate the production of lactase enzyme in our gut. Additionally, the alkaline phosphatase enzyme is mostly carried on the raw butter fat globule. That enzyme is responsible for reduction of inflammatory responses on your body. Pasteurization destroys that highly beneficial enzyme. Pasteurization destroys the bioavailability and nutrient density of dairy products including butter. Once you have had raw butter, you will never go back! It’s awesome.
