HOW TO MAKE: HERB RAW BUTTER

Doesn’t the thought of this delicious recipe alone make your mouth water? I am obsessed with raw butter, and to spice it up, today we bring you a rosemary and garlic herb raw butter! Made with real, whole raw ingredients, it doesn’t get much butter tastier or healthier than this. Let’s take a look at our key ingredients.

HEAVY RAW CREAM

Raw (unpasteurized) cream is the fat portion of the milk, sometimes called “milk fat”. It’s what settles at the top of a container of whole milk when it sits on the shelf undisturbed for a couple of hours. We do NOT homogenize (crushing milk fat), so there is a natural rich cream line at the top of our Whole Raw Milk. Cream is made by separating the cream from our Whole Raw Milk so we can make our Heavy Raw Cream or Raw Butter. Heavy raw cream is the key ingredient in making raw butter.

HOW TO MAKE: FRESH RAW HERB BUTTER

INGREDIENTS

  • 2 cups of RAW FARM Heavy Raw Cream

  • 2 cloves organic garlic, finely minced

  • 2 tablespoons fresh organic rosemary, finely chopped

INSTRUCTIONS

  1. In a bowl, add 2 cups of Heavy Raw Cream. Using a mixer, whisk the raw cream on medium speed for several minutes. You’ll firstly see it whip, then it will turn into a butter-like consistency. Once you see the butter form and a pool of liquid underneath (this is buttermilk), you can stop mixing. *save the buttermilk for other recipes like pancakes, buttermilk biscuits, or feed to your pets!

  2. Strain the remaining liquid from the butter (buttermilk) and form the butter into a ball. Rinse with cold water and drain again.

  3. Spread the butter thinly on a plate or cutting board. Add finely chopped rosemary and finely minced garlic. Roll into a log and store in the fridge. Tada! You’ve made a delicious, nutritious herb raw butter. Spread it on a piece of warm sourdough bread, dollop it on cooked proteins like steak, chicken, fish, or pork chops, or pair with your favorite raw cheese!
