HOW TO MAKE FARM FRESH RAW BUTTER
Butter is a staple food for many people. It’s a superfood in our house. Best of all, it’s made with ONE simple ingredient: Heavy Raw Cream! HOW TO MAKE RAW BUTTER
INGREDIENTS:
1 pint (2 cups) of Raw Heavy Cream
1 tsp salt, optional
fresh herbs of choice, optional
INSTRUCTIONS:
In a stand mixer or large bowl with an electric hand mixer, pour in the Raw Heavy Cream. Beat for about 10-15 minutes, or until the solids and liquids have been separated, forming a ball of butter and liquid buttermilk. You’ll first notice that the heavy cream turns into a raw whipping cream texture. Continue letting it mix and the cream will get thicker and thicker, becoming almost grainy-like. Eventually, the butterfat will solidify into butter, leaving behind the buttermilk.
Next, pour the excess buttermilk into a bowl. Then, group the butter pieces into a ball and strain the liquid out using a strainer (or your hands) until most of the buttermilk is drained out. If necessary, put the butter back into the stand mixer or mixing bowl and mix one more time to get more liquid out.
Strain the last bit of the buttermilk from the butter. Leave as is or add salt and herbs of choice for more flavor. Transfer the butter into a butter dish or glass container for optimal storage. Store at room temperature or in the fridge (if adding fresh herbs, definitely store in the fridge).

How long does raw butter last?
Truthfully, raw never spoils. It just sours. Safe to consume sour. It is a natural process. The most popular sour raw food is sour cream. Traditionally made with raw heavy cream that is allowed to sour for 1 month after the freshness evolves. However, the following applies if you want to consume your products when they still taste as fresh as possible.
At room temperature, raw butter is good for a couple of days. The longer it sits out, the quicker it will start to sour. As it sours, it develops a cheesy, Parmigiano Reggiano taste. Still delicious, just slightly different from fresh, sweet raw butter.
In the fridge, raw butter can last for up to 60 days. Maybe even longer depending on how you store it. From personal experience, glass containers are best.
How can I use raw butter?
Raw butter can be used just like you would use any store-bought butter, and raw butter is so much better for you. A few of our favorite ways to enjoy raw butter are:
On pancakes, french toast, and waffles
On bagels and toast
In oatmeal (delicious)
On top of steaks
When baking
Mixed with raw honey
On its own by the spoonful. 😉

Can I buy raw butter at the store?
Every state has its own unique laws around raw milk products. While the consumption of raw milk is legal in all 50 states, the sale of raw milk is not legal in many states on a retail level. Find out more about the raw milk laws in your state here.
