Cheddar cheese is a widely popular semi-hard cheese originating in England, made from fresh raw milk that has been matured for several months.The taste of cheddar depends on how long it was aged, ranging from mild to extra sharp. It can be white, off-white, or yellow in color. Most consumers are used to a YELLOW colored cheddar cheese. (By the way, this is not the natural color). Food coloring or additives were added to change its natural color, making it recognizable as cheddar cheese.
