The destruction of beneficial bacteria and enzymes begins to occur once heated above 102°F, which is why our truly raw cheese has never been heated above 102 °F. With that being said, the longer you heat raw dairy products and the higher the temperature, the more destruction occurs. However, a great way to enjoy raw dairy products with heated founds can be achieved by pouring raw cream into your morning coffee because it doesn’t reach temperatures hot enough to destroy these enzymes or bacteria (read more here). Adding raw cheese on top of pasta, a dollop of raw butter on top of cooked vegetables, toast, or pancakes, or drizzling raw heavy cream over freshly grilled chicken or steak as a sauce are all great ways to incorporate raw dairy products into cooked meals and still enjoy the raw benefits.

If you ARE going to use dairy products for recipes that require milk, cream, cheese, and butter to be heated above 102°F, it is still best to use raw. Why? Raw dairy products are whole and unprocessed; they have not been exposed to pasteurization. Using already-pasteurized dairy products when cooking or baking is like double-heating your dairy and causing even more damage to the nutrients.
